I first found out about The Chocolate Girl and her website, GnosisChocolate.com(no’sis) n. [Greek, knowledge], from a former client in Belize when I was visiting his Eco-Lodge during Chocolate Week. You make your own chocolate from the Cacao Pod to a final wrapped chocolate bar. Pretty amazing process and the final product will spoil you forever as far as store bought chocolate…there is no comparison…

The Cacao Pod is harvested from the tree, they bust them open and take all the little chocolate pieces out…wouldn’t that be cool if that’s how it worked…it does somewhere…not in this plane of existence unfortunately. They open the pods and the seeds inside are coated with a kind of clear gel and white skin…you can pop one in your mouth and the gel is sweet…the seeds are then fermented, then roasted…after they are roasted, the pan is taken out of the oven or off the fire, cooled a bit, then the Chocolatier, in this case, The Chocolate Girl, will start to flip them over and over, the way a chef would toss a salad…this is done to remove the chaff from the seeds.

When that step is done, you have chocolate nibs…you can eat them at that point, but they’re a bit bitter, If I remember correctly. Then you start to grind them up and add whatever it is you are going to add. I remember when I was in Belize, the grinder would be on all day and night…it was a small grinder so that could be why it took so long?

The grinder is like a Steamroller wheel…it grinds them down into a beautiful paste…I say beautiful because chocolate IS beautiful…imagine a world WITHOUT chocolate!! Maybe I should say, imagine having chocolate taken away from us, kind of like the way our rights are being taken away right now because of a group of people on the “left” that don’t like chocolate and what it does for us. That’s why they make their poison chocolate.

Chocolate made by pure companies like Gnosis Chocolate, that don’t have corporate handlers and that don’t put the poison in their brand like the big ones do, will always do well! I had a bunch of candy bars made for an annual party I would throw…they were incredible and went fast! Chocolate, when made properly, like the way The Chocolate Girl makes it, is GOOD for you and she puts all kinds of really healthy things in her creations…the most healthy ingredient added is LOVE!
